Ingredients 

Meatballs

  • 1 lb ground beef
  • ¼ cup uncooked white rice
  • 1 egg beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Soup

  • 8 cups beef broth
  • 2 carrots sliced
  • 2 potatoes diced
  • 1 zucchini sliced
  • 1 onion chopped
  • 1 can tomato sauce (8 oz)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried cilantro
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. In a large mixing bowl, combine ground beef, rice, egg, garlic powder, cumin, salt, and black pepper. Mix well and form into small meatballs.
  2. In a large pot, bring beef broth to a boil. Add meatballs and reduce heat to a simmer. Cook for 20 minutes.
  3. Add carrots, potatoes, zucchini, onion, tomato sauce, oregano, cilantro, salt, and black pepper to the pot. Simmer for another 20 minutes or until vegetables are tender.
  4. Serve hot and enjoy!
