A hearty and delicious Mexican meatball soup.

Main Ingredients
- 1 lb ground beef
 - ½ cup uncooked rice
 - 1 egg
 - ¼ cup chopped onion
 - 2 cloves garlic, minced
 - ¼ cup chopped cilantro
 - 1 teaspoon salt
 - ½ teaspoon black pepper
 - 4 cups beef broth
 - 2 cups water
 - 1 can diced tomatoes (14.5 oz)
 - 1 cup chopped carrots
 - 1 cup chopped potatoes
 - 1 cup chopped zucchini
 
 
In a bowl, mix ground beef, rice, egg, onion, garlic, cilantro, salt, and pepper.
Form mixture into meatballs.
In a large pot, bring beef broth and water to a boil.
Add meatballs, tomatoes, carrots, potatoes, and zucchini.
Reduce heat and simmer for 30-40 minutes until meatballs and vegetables are cooked.
