Ingredients 

Main Ingredients

  • 1 lb ground beef
  • ½ cup uncooked rice
  • 1 egg
  • ¼ cup chopped onion
  • 2 cloves garlic, minced
  • ¼ cup chopped cilantro
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 cups beef broth
  • 2 cups water
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup chopped carrots
  • 1 cup chopped potatoes
  • 1 cup chopped zucchini

Instructions 

  1. In a bowl, mix ground beef, rice, egg, onion, garlic, cilantro, salt, and pepper.
  2. Form mixture into meatballs.
  3. In a large pot, bring beef broth and water to a boil.
  4. Add meatballs, tomatoes, carrots, potatoes, and zucchini.
  5. Reduce heat and simmer for 30-40 minutes until meatballs and vegetables are cooked.
