Ingredients

  • 6 cups potatoes, peeled and diced
  • 1 cup celery, chopped
  • 1 cup onion, finely chopped
  • 1 cup mayonnaise
  • 2 tablespoon yellow mustard
  • 2 tablespoon sugar
  • 2 tablespoon apple cider vinegar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 large hard-boiled eggs, chopped

Instructions 

  1. 1. Boil the diced potatoes in a large pot of salted water until tender, about 10-15 minutes. Drain and let cool.
  2. 2. In a large mixing bowl, combine the mayonnaise, mustard, sugar, apple cider vinegar, salt, and pepper. Mix well.
  3. 3. Add the cooled potatoes, celery, onion, and chopped eggs to the bowl. Gently fold the ingredients together until well combined.
  4. 4. Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld.
