- 2 medium zucchini
- 1 cup breadcrumbs
- ½ cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 large eggs beaten
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
Slice zucchini into thin rounds.
In a bowl, mix breadcrumbs, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
Dip zucchini slices in beaten eggs, then coat with breadcrumb mixture.
Place coated zucchini slices on the prepared baking sheet.
Bake for 25 minutes or until golden and crispy.
