Ingredients 

Main Ingredients

  • 3 lbs Beef chuck roast cut into chunks
  • 2 cups Beef broth
  • 5 Dried guajillo chiles stems and seeds removed
  • 3 Dried ancho chiles stems and seeds removed
  • 1 large Onion quartered
  • 6 cloves Garlic
  • 1 teaspoon Dried oregano
  • 1 teaspoon Ground cumin
  • 2 tablespoon Apple cider vinegar
  • 2 Bay leaves
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. 1. Toast the dried chiles in a dry skillet over medium heat until fragrant, about 2-3 minutes.
  2. 2. Soak the toasted chiles in hot water for 20 minutes until softened.
  3. 3. Blend the soaked chiles, onion, garlic, oregano, cumin, and vinegar until smooth.
  4. 4. In a large pot, add the beef chunks and pour the chile sauce over them.
  5. 5. Add the beef broth, bay leaves, salt, and pepper. Bring to a boil.
  6. 6. Reduce heat to low, cover, and simmer for 3 hours until the beef is tender.
  7. 7. Remove bay leaves before serving. Serve hot with tortillas, cilantro, and lime.
