Main Ingredients
- 3 lbs Beef chuck roast cut into chunks
- 2 cups Beef broth
- 5 Dried guajillo chiles stems and seeds removed
- 3 Dried ancho chiles stems and seeds removed
- 1 large Onion quartered
- 6 cloves Garlic
- 1 teaspoon Dried oregano
- 1 teaspoon Ground cumin
- 2 tablespoon Apple cider vinegar
- 2 Bay leaves
- to taste Salt
- to taste Black pepper
1. Toast the dried chiles in a dry skillet over medium heat until fragrant, about 2-3 minutes.
2. Soak the toasted chiles in hot water for 20 minutes until softened.
3. Blend the soaked chiles, onion, garlic, oregano, cumin, and vinegar until smooth.
4. In a large pot, add the beef chunks and pour the chile sauce over them.
5. Add the beef broth, bay leaves, salt, and pepper. Bring to a boil.
6. Reduce heat to low, cover, and simmer for 3 hours until the beef is tender.
7. Remove bay leaves before serving. Serve hot with tortillas, cilantro, and lime.
