Black Bean and Sweet Potato Quesadillas

Ingredients 

Main Ingredients

  • 1 cup Black Beans cooked and drained
  • 1 medium Sweet Potato peeled and diced
  • 1 cup Shredded Cheese cheddar or your choice
  • 4 large Tortillas
  • 1 tablespoon Olive Oil
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder
  • 1 pinch Salt to taste

Instructions 

  1. 1. Heat olive oil in a skillet over medium heat. Add diced sweet potato and cook until tender, about 10 minutes.
  2. 2. Add black beans, ground cumin, chili powder, and salt to the skillet. Cook for another 5 minutes, stirring occasionally.
  3. 3. In a separate skillet, place one tortilla and sprinkle with cheese. Add a portion of the sweet potato and black bean mixture, then top with more cheese and another tortilla.
  4. 4. Cook the quesadilla until the bottom tortilla is golden brown, then flip and cook the other side until golden brown and the cheese is melted.
  5. 5. Repeat with the remaining tortillas and filling. Cut into wedges and serve warm.
