Ingredients 

Main Ingredients

  • 1 cup rice
  • 1 can black beans drained and rinsed
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 cup chicken broth
  • 1 cup water
  • 1 tablespoon lime juice freshly squeezed
  • 1 tablespoon cilantro chopped

Instructions 

  1. Heat olive oil in a pot over medium heat. Add chopped onion and minced garlic, and sauté until softened.
  2. Add rice to the pot and stir to coat with the oil. Cook for a couple of minutes until the rice is lightly toasted.
  3. Add black beans, cumin, salt, chicken broth, and water to the pot. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for about 20 minutes, or until the rice is cooked and the liquid is absorbed.
  5. Remove from heat and let sit for 5 minutes. Fluff with a fork and stir in lime juice and chopped cilantro before serving.
