Instructions
Heat olive oil in a pot over medium heat. Add chopped onion and minced garlic, and sauté until softened.
Add rice to the pot and stir to coat with the oil. Cook for a couple of minutes until the rice is lightly toasted.
Add black beans, cumin, salt, chicken broth, and water to the pot. Bring to a boil.
Reduce heat to low, cover, and simmer for about 20 minutes, or until the rice is cooked and the liquid is absorbed.
Remove from heat and let sit for 5 minutes. Fluff with a fork and stir in lime juice and chopped cilantro before serving.
