Boudin Balls Recipe

- 1 lb Boudin sausage
- 1 cup All-purpose flour
- 2 Eggs beaten
- 1 cup Breadcrumbs
- 1 cup Vegetable oil for frying
1. Remove the boudin sausage from its casing and form into 1-inch balls.
2. Roll each ball in flour, dip in beaten eggs, and coat with breadcrumbs.
3. Heat vegetable oil in a frying pan over medium heat.
4. Fry the boudin balls in batches until golden brown, about 3-4 minutes per side.
5. Remove with a slotted spoon and drain on paper towels. Serve hot.
