  • 1 kg Carrots
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 1 tablespoon Olive Oil
  • to taste Salt
  • to taste Pepper

Instructions 

  1. Heat the olive oil in a pot over medium heat.
  2. Add the chopped onion and minced garlic, sauté until soft.
  3. Add the carrots and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Blend the soup until smooth. Season with salt and pepper to taste.
