Ingredients

  • 2 pounds Yukon Gold potatoes peeled and cut into 1-inch cubes
  • 3 large eggs hard-boiled and chopped
  • 1 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 1 cup celery chopped
  • ½ cup red onion finely chopped
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste
  • 2 tablespoons fresh dill chopped

Instructions 

  1. 1. Boil the potatoes in a large pot of salted water until tender, about 10 minutes. Drain and let cool.
  2. 2. In a large mixing bowl, combine the mayonnaise, mustard, celery, red onion, salt, and black pepper.
  3. 3. Add the cooled potatoes and chopped eggs to the bowl. Mix gently to combine.
  4. 4. Stir in the fresh dill. Adjust seasoning with salt and pepper if needed.
  5. 5. Chill in the refrigerator for at least 1 hour before serving.
