Ingredients 

Main Ingredients

  • 2 large eggplants sliced lengthwise
  • 2 cups ricotta cheese
  • 1 cup mozzarella cheese shredded
  • ½ cup Parmesan cheese grated
  • 2 eggs beaten
  • 2 cups marinara sauce
  • 1 tablespoon olive oil
  • to taste salt
  • to taste black pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Brush eggplant slices with olive oil and season with salt and pepper. Bake for 15 minutes until tender.
  3. In a mixing bowl, combine ricotta, half of the mozzarella, Parmesan, and beaten eggs. Mix well.
  4. Spread a thin layer of marinara sauce in a baking dish.
  5. Place a spoonful of the cheese mixture on each eggplant slice and roll up. Place seam-side down in the baking dish.
  6. Top with remaining marinara sauce and mozzarella cheese.
  7. Bake for 25 minutes until bubbly and golden.
