Instructions
Preheat oven to 350°F (175°C).
In a mixing bowl, combine shredded chicken, half of the cheese, and chopped onion.
Fill each tortilla with the chicken mixture, roll them up, and place them seam-side down in a baking dish.
Pour enchilada sauce over the rolled tortillas and sprinkle with the remaining cheese.
Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
