Farmers Market Vegetarian Quesadillas
Delicious vegetarian quesadillas made with fresh ingredients from the farmers market.

Main Ingredients
- 4 large flour tortillas
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup diced bell peppers
- 1 cup diced onions
- 1 cup sliced mushrooms
- 1 tablespoon olive oil
- 1 pinch salt to taste
- 1 pinch black pepper to taste
Heat the olive oil in a skillet over medium heat.
Add the diced onions, bell peppers, and mushrooms. Cook until softened, about 5 minutes.
Season with salt and black pepper to taste.
Place a tortilla in the skillet, sprinkle with cheese, and add the cooked vegetables on top.
Top with another tortilla and cook until the bottom tortilla is golden brown, about 2-3 minutes.
Flip the quesadilla and cook until the other side is golden brown and the cheese is melted, another 2-3 minutes.
Repeat with the remaining tortillas and filling.
Cut into wedges and serve warm.
