Ingredients 

Main Ingredients

  • 4 large flour tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 cup sliced mushrooms
  • 1 tablespoon olive oil
  • 1 pinch salt to taste
  • 1 pinch black pepper to taste

Instructions 

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the diced onions, bell peppers, and mushrooms. Cook until softened, about 5 minutes.
  3. Season with salt and black pepper to taste.
  4. Place a tortilla in the skillet, sprinkle with cheese, and add the cooked vegetables on top.
  5. Top with another tortilla and cook until the bottom tortilla is golden brown, about 2-3 minutes.
  6. Flip the quesadilla and cook until the other side is golden brown and the cheese is melted, another 2-3 minutes.
  7. Repeat with the remaining tortillas and filling.
  8. Cut into wedges and serve warm.
