  • 2 pieces Chicken breasts Grilled and chopped
  • ¼ cup Mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 stalk Celery Chopped
  • ¼ cup Red onion Chopped
  • 8 slices Bread Toasted
  • to taste Salt and pepper

Instructions 

  1. Grill the chicken breasts until fully cooked, then chop into small pieces.
  2. In a mixing bowl, combine the chopped chicken, mayonnaise, Dijon mustard, chopped celery, and chopped red onion. Mix well.
  3. Season the mixture with salt and pepper to taste.
  4. Toast the bread slices.
  5. Assemble the sandwiches by spreading the chicken salad mixture onto four slices of toasted bread, then top with the remaining slices.
