Ingredients 

Shrimp and Salad

  • 1 lb large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved

Louie Dressing

  • ½ cup mayonnaise
  • ¼ cup ketchup
  • 1 tablespoon lemon juice
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon prepared horseradish
  • 1 tablespoon chopped fresh chives
  • ¼ teaspoon paprika
  • to taste salt and pepper

Instructions 

  1. 1. Preheat grill to medium-high heat.
  2. 2. Toss shrimp with olive oil, salt, and pepper. Grill shrimp for 2-3 minutes per side until opaque and cooked through.
  3. 3. In a mixing bowl, whisk together all Louie dressing ingredients until smooth.
  4. 4. Arrange lettuce, cherry tomatoes, avocado, and hard-boiled eggs on a platter. Top with grilled shrimp.
  5. 5. Drizzle Louie dressing over the salad and serve immediately.
