King Ranch Chicken Casserole Recipe

Ingredients 

Main Ingredients

  • 2 cups Cooked chicken, shredded
  • 1 can Cream of mushroom soup
  • 1 can Cream of chicken soup
  • 1 can Diced tomatoes with green chilies
  • 1 cup Chicken broth
  • 1 cup Sour cream
  • 1 cup Shredded cheddar cheese
  • 12 pieces Corn tortillas, cut into strips
  • 1 cup Chopped onion
  • 1 cup Chopped bell pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • to taste Salt and pepper

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked chicken, cream of mushroom soup, cream of chicken soup, diced tomatoes with green chilies, chicken broth, sour cream, chopped onion, chopped bell pepper, garlic powder, chili powder, cumin, salt, and pepper.
  3. In a baking dish, layer half of the corn tortilla strips, then half of the chicken mixture, and half of the shredded cheddar cheese. Repeat the layers.
  4. Bake in the preheated oven for 40 minutes, or until bubbly and golden brown on top.
  5. Let it cool for a few minutes before serving.
