- ½ cup unsalted butter plus extra for greasing
- 4 oz semi-sweet chocolate chopped
- 2 large eggs
- 2 egg yolks
- ¼ cup granulated sugar
- 1 pinch salt
- 2 tablespoon all-purpose flour
Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour.
Melt the butter and chocolate together in a heatproof bowl over simmering water, stirring until smooth.
In another bowl, whisk the eggs, egg yolks, sugar, and salt until thick and pale.
Fold the melted chocolate mixture into the egg mixture, then fold in the flour until just combined.
Divide the batter evenly among the prepared ramekins. Place them on a baking sheet and bake for 12 minutes, until the edges are set but the centers are still soft.
Let the cakes cool in the ramekins for 1 minute, then run a knife around the edges to loosen and invert onto plates. Serve immediately.
