Instructions
Heat olive oil in a large pot over medium heat.
Add diced onion and cook until translucent, about 5 minutes.
Stir in minced garlic and cook for another minute.
Add shredded chicken, chicken broth, orzo, lemon juice, lemon zest, and dried oregano. Bring to a boil.
Reduce heat and simmer for 10-12 minutes, or until orzo is tender.
Season with salt and pepper to taste.
Stir in baby spinach and cook until wilted, about 2 minutes.
Serve hot and enjoy!
