Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups shredded cooked chicken
  • 6 cups chicken broth
  • 1 cup orzo pasta
  • 1 lemon, juiced and zested
  • 1 teaspoon dried oregano
  • to taste salt and pepper
  • 2 cups baby spinach

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until translucent, about 5 minutes.
  3. Stir in minced garlic and cook for another minute.
  4. Add shredded chicken, chicken broth, orzo, lemon juice, lemon zest, and dried oregano. Bring to a boil.
  5. Reduce heat and simmer for 10-12 minutes, or until orzo is tender.
  6. Season with salt and pepper to taste.
  7. Stir in baby spinach and cook until wilted, about 2 minutes.
  8. Serve hot and enjoy!
