  • 3 pcs Lemons zested and juiced
  • 1 cup Sugar
  • 4 pcs Eggs large, beaten
  • ½ cup Butter unsalted, cut into pieces

Instructions 

  1. In a saucepan, combine lemon zest, lemon juice, and sugar. Cook over medium heat until sugar dissolves.
  2. Whisk in the beaten eggs and cook, stirring constantly, until the mixture thickens and coats the back of a spoon.
  3. Remove from heat and whisk in the butter pieces until smooth.
  4. Strain the curd through a fine-mesh strainer into a bowl to remove any cooked egg bits.
  5. Cover with plastic wrap, pressing it directly onto the surface of the curd to prevent a skin from forming. Chill in the refrigerator before using.
