Lobster Bisque Recipe

Main Ingredients
- 2 cups lobster meat cooked and chopped
- 1 cup heavy cream
- 2 cups fish stock
- 1 cup dry white wine
- 1 medium onion chopped
- 2 cloves garlic minced
- 1 tablespoon tomato paste
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoon butter
1. In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until translucent.
2. Stir in the tomato paste and paprika, and cook for another minute.
3. Add the fish stock, white wine, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
4. Add the cooked lobster meat and heavy cream. Simmer for another 10 minutes.
5. Use a blender to puree the soup until smooth. Strain through a fine mesh strainer back into the pot.
6. Reheat the bisque gently, then serve hot.
