  • 1 cup Milk
  • 2 tablespoons Sugar
  • 1 teaspoon Baking Powder
  • ½ teaspoon Ground Cinnamon

  • 1 Egg
  • 2 tablespoons Butter, melted
  • 1 teaspoon Vanilla Extract

Instructions 

  1. In a mixing bowl, combine mashed sweet potatoes, flour, milk, sugar, baking powder, cinnamon, and salt.
  2. Add the egg, melted butter, and vanilla extract. Mix until well combined.
  3. Heat a skillet over medium heat and lightly grease it.
  4. Pour ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
