Ingredients

  • 1 can black beans drained and rinsed
  • 1 can kidney beans drained and rinsed
  • 1 can corn drained
  • 1 piece red bell pepper chopped
  • 0.5 piece red onion finely chopped
  • 0.25 cup cilantro chopped
  • 0.25 cup olive oil
  • 0.25 cup red wine vinegar
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions 

  1. Combine beans, corn, bell pepper, onion, and cilantro in a large bowl.
  2. In a small bowl, whisk together olive oil, red wine vinegar, cumin, salt, and pepper.
  3. Pour dressing over the salad and toss to coat.
  4. Chill in the refrigerator for at least 1 hour before serving.
