Main Ingredients
- 1 can black beans drained and rinsed
- 1 can kidney beans drained and rinsed
- 1 can corn drained
- 1 piece red bell pepper chopped
- 0.5 piece red onion finely chopped
- 0.25 cup cilantro chopped
- 0.25 cup olive oil
- 0.25 cup red wine vinegar
- 1 teaspoon ground cumin
- Salt and pepper to taste
Combine beans, corn, bell pepper, onion, and cilantro in a large bowl.
In a small bowl, whisk together olive oil, red wine vinegar, cumin, salt, and pepper.
Pour dressing over the salad and toss to coat.
Chill in the refrigerator for at least 1 hour before serving.
