  • 12 large scallops fresh, patted dry
  • 2 tablespoon olive oil
  • 1 tablespoon butter
  • to taste salt
  • to taste black pepper freshly ground

Instructions 

  1. 1. Pat the scallops dry with paper towels.
  2. 2. Season both sides with salt and pepper.
  3. 3. Heat olive oil in a skillet over medium-high heat.
  4. 4. Add scallops to the skillet, making sure they are not touching.
  5. 5. Sear for 2-3 minutes on each side until golden brown.
  6. 6. Add butter to the skillet and baste scallops for an additional minute.
  7. 7. Remove from heat and serve immediately.
