Ingredients

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon truffle oil
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 tablespoon chopped fresh parsley (optional)

Instructions 

  1. Preheat oven to 425°F (220°C).
  2. Cut potatoes into thin fries.
  3. Toss fries with olive oil, salt, and pepper.
  4. Spread fries on a baking sheet in a single layer.
  5. Bake for 25-30 minutes, turning halfway through, until golden and crispy.
  6. Remove from oven and toss with Parmesan cheese and truffle oil.
  7. Garnish with parsley if desired.
