Main Ingredients
- 4 large Russet Potatoes
- 2 tablespoon Olive Oil
- 1 cup Cheddar Cheese, shredded
- 4 slices Bacon, cooked and crumbled
- 2 tablespoon Chives, chopped
- to taste Salt
- to taste Black Pepper
Preheat oven to 400°F (200°C).
Scrub potatoes clean and bake for 45 minutes until tender.
Let potatoes cool, then cut in half and scoop out most of the flesh, leaving a bit for structure.
Brush potato skins with olive oil, season with salt and pepper, and bake for 10 minutes until crispy.
Fill skins with cheese and bacon, then bake until cheese is melted.
Top with chives and serve immediately.
