Quinoa with Chickpeas and Tomatoes

Main Ingredients
- 1 cup quinoa rinsed
- 1 can chickpeas drained and rinsed
- 1 cup cherry tomatoes halved
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 cups water
1. Rinse the quinoa under cold water.
2. In a saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes.
3. In a mixing bowl, combine the chickpeas, cherry tomatoes, olive oil, cumin, salt, and black pepper.
4. Fluff the cooked quinoa with a fork and add it to the mixing bowl. Stir to combine.
5. Serve warm or at room temperature.
