Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 1 can chickpeas drained and rinsed
  • 1 cup cherry tomatoes halved
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups water

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes.
  3. 3. In a mixing bowl, combine the chickpeas, cherry tomatoes, olive oil, cumin, salt, and black pepper.
  4. 4. Fluff the cooked quinoa with a fork and add it to the mixing bowl. Stir to combine.
  5. 5. Serve warm or at room temperature.
