Ingredients 

Main Ingredients

  • 1 lb Italian sausage casings removed
  • 4 potatoes peeled and diced
  • 1 onion chopped
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1 bunch kale stems removed and chopped
  • to taste salt and pepper

Instructions 

  1. 1. In a large pot, cook the sausage over medium heat until browned. Remove and set aside.
  2. 2. In the same pot, add the onion and garlic. Cook until softened.
  3. 3. Add the potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. 4. Add the sausage back to the pot along with the kale. Cook until kale is wilted. Season with salt and pepper to taste.
