Ingredients

  • 1 cup crab meat preferably fresh
  • 1 cup heavy cream
  • 1 cup milk
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper freshly ground
  • 2 tablespoon sherry

Instructions 

  1. Melt butter in a large pot over medium heat.
  2. Add flour and whisk until smooth to make a roux.
  3. Slowly add milk and heavy cream, whisking constantly.
  4. Bring to a simmer and cook until thickened, about 10 minutes.
  5. Add crab meat, salt, and pepper. Simmer for another 10 minutes.
  6. Stir in sherry and cook for an additional 5 minutes.
  7. Serve hot, garnished with a sprinkle of fresh parsley if desired.
