- 2 pounds corned beef brisket
- 8 slices rye bread
- 1 cup sauerkraut drained
- 8 slices Swiss cheese
- ½ cup Russian dressing
- 2 tablespoon butter softened
Place corned beef brisket in slow cooker. Cover with water. Cook on low for 8 hours.
Remove corned beef from slow cooker. Let rest for 10 minutes, then slice thinly.
Butter one side of each slice of rye bread. Place 4 slices, butter side down, on a skillet.
Layer each slice with Swiss cheese, corned beef, sauerkraut, and Russian dressing. Top with remaining bread slices, butter side up.
Grill sandwiches over medium heat until bread is golden brown and cheese is melted, about 3-4 minutes per side.
