Southern Dill Potato Salad

Main Ingredients
- 2 pounds red potatoes cut into bite-sized pieces
- 1 cup mayonnaise
- ¼ cup dill pickle relish
- 2 tablespoons fresh dill chopped
- 1 tablespoon yellow mustard
- 1 teaspoon salt
- ½ teaspoon black pepper
- 3 hard-boiled eggs chopped
- ½ cup celery chopped
- ¼ cup red onion finely chopped
1. Boil the potatoes in a large pot of salted water until tender, about 15 minutes. Drain and let cool.
2. In a large mixing bowl, combine the mayonnaise, dill pickle relish, fresh dill, mustard, salt, and pepper.
3. Add the cooled potatoes, chopped eggs, celery, and red onion to the bowl. Mix gently to combine.
4. Chill in the refrigerator for at least 1 hour before serving.
