Southwestern Egg Rolls
These Southwestern Egg Rolls are packed with chicken, black beans, corn, and cheese, all wrapped up and fried to crispy perfection.

- 2 cups chicken, cooked and shredded
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup shredded cheese
- 1 cup spinach, chopped
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 8 pieces egg roll wrappers
- 2 cups oil for frying
1. In a large mixing bowl, combine chicken, black beans, corn, cheese, spinach, cumin, chili powder, salt, and pepper.
2. Lay out an egg roll wrapper and place about 2 tablespoons of the mixture in the center. Fold the sides in and roll up tightly. Repeat with remaining wrappers and filling.
3. Heat oil in a frying pan over medium heat. Fry the egg rolls in batches until golden brown and crispy, about 2-3 minutes per side.
4. Remove egg rolls from oil and drain on paper towels. Serve warm with your favorite dipping sauce.
