Spinach and Mushroom Quesadillas
A quick and tasty quesadilla recipe with spinach and mushrooms.

Main Ingredients
- 2 cups Spinach fresh
- 1 cup Mushrooms sliced
- 1 cup Cheese shredded
- 4 Tortillas large
- 1 tablespoon Olive Oil
Heat olive oil in a skillet over medium heat.
Add mushrooms and cook until soft.
Add spinach and cook until wilted.
Remove from skillet and set aside.
Place a tortilla in the skillet, sprinkle with cheese, add spinach and mushroom mixture, and top with more cheese.
Top with another tortilla and cook until golden brown, then flip and cook the other side.
Repeat with remaining tortillas and filling.
Cut into wedges and serve warm.
