Ingredients

  • 1 lb ground chicken
  • 1 shallot, finely sliced
  • 2 cloves garlic, minced
  • 1 red chili, finely chopped or to taste
  • 2 tablespoon fish sauce
  • 2 tablespoon lime juice freshly squeezed
  • 1 tablespoon sugar
  • 1 cup fresh mint leaves chopped
  • 1 cup fresh cilantro leaves chopped
  • 1 cup green onions sliced
  • 1 head lettuce for serving

Instructions 

  1. Heat a skillet over medium heat. Add the ground chicken and cook until no longer pink, breaking it up with a spoon.
  2. In a mixing bowl, combine the cooked chicken, shallot, garlic, and red chili.
  3. In a small bowl, mix the fish sauce, lime juice, and sugar until the sugar dissolves. Pour over the chicken mixture and toss to combine.
  4. Add the mint, cilantro, and green onions to the chicken mixture and toss gently.
  5. Serve the larb with lettuce leaves for wrapping.
