- 4 cups Chicken broth
- 2 stalks Lemongrass cut into 2-inch pieces and smashed
- 3 slices Galangal or ginger
- 3 leaves Kaffir lime leaves torn into pieces
- 2 Thai chilies smashed
- 200 grams Shrimp peeled and deveined
- 1 cup Mushrooms sliced
- 2 tablespoons Fish sauce
- 2 tablespoons Lime juice freshly squeezed
- 1 teaspoon Sugar
- 2 sprigs Cilantro chopped
1. Bring the chicken broth to a boil in a pot.
2. Add lemongrass, galangal, kaffir lime leaves, and Thai chilies. Simmer for 5 minutes.
3. Add shrimp and mushrooms. Cook until shrimp is pink and opaque, about 3-4 minutes.
4. Stir in fish sauce, lime juice, and sugar. Adjust seasoning to taste.
5. Remove from heat and garnish with chopped cilantro. Serve hot.
