Ingredients

  • 1 can black beans drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 cup diced tomatoes drained
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 large flour tortillas
  • 1 cup vegan cheese shredded

Instructions 

  1. 1. In a bowl, mix black beans, corn, diced tomatoes, cumin, and chili powder.
  2. 2. Heat a skillet over medium heat. Place a tortilla in the skillet.
  3. 3. Spread a portion of the bean mixture on half of the tortilla. Sprinkle with vegan cheese.
  4. 4. Fold the tortilla over and cook until golden brown, about 2-3 minutes per side.
  5. 5. Repeat with remaining tortillas and filling. Serve warm.
