Ingredients 

Main Ingredients

  • 1 lb chicken breast boneless, skinless
  • 1 cup rice uncooked
  • 1 onion diced
  • 2 cloves garlic minced
  • 2 stalks celery sliced
  • 6 cups chicken broth
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley

Instructions 

  1. 1. In a large pot, heat a bit of oil over medium heat. Add the diced onion and minced garlic, and sauté until fragrant.
  2. 2. Add the sliced carrots and celery, and cook for another 5 minutes.
  3. 3. Pour in the chicken broth and bring to a boil.
  4. 4. Add the chicken breast, rice, salt, pepper, thyme, and parsley. Reduce heat to low and simmer for about 20 minutes, or until the chicken is cooked through and the rice is tender.
  5. 5. Remove the chicken breast, shred it with two forks, and return it to the pot. Stir well and adjust seasoning if necessary.
  6. 6. Serve hot and enjoy!
