Ingredients

  • 400 g spaghetti
  • 6 cloves garlic thinly sliced
  • ½ cup extra virgin olive oil
  • 1 teaspoon red pepper flakes
  • ¼ cup fresh parsley chopped
  • to taste salt
  • to taste black pepper freshly ground

Instructions 

  1. 1. Cook the spaghetti in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water, then drain the rest.
  2. 2. In a large skillet, heat the olive oil over medium heat. Add the garlic and red pepper flakes, and cook until the garlic is golden brown.
  3. 3. Add the cooked spaghetti to the skillet, tossing to coat in the oil. If needed, add some reserved pasta water to loosen the sauce.
  4. 4. Season with salt and black pepper to taste. Stir in the chopped parsley.
  5. 5. Serve immediately, garnished with extra parsley if desired.
