- 2 tablespoon olive oil
- 1 lb chicken breast, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 carrot, julienned
- ¼ cup peanut sauce
- 4 large lettuce leaves
- 2 tablespoon chopped cilantro
- 1 lime, cut into wedges
Heat olive oil in a skillet over medium heat.
Add chicken and cook until no longer pink, about 5-7 minutes.
Add red bell pepper and carrot, cook for another 2-3 minutes.
Stir in peanut sauce and cook for another minute.
Place a large lettuce leaf on a plate and spoon chicken mixture onto the leaf.
Top with chopped cilantro and a squeeze of lime.
Roll up the lettuce leaf and serve immediately.
