Ingredients

  • 2 tablespoon olive oil
  • 1 lb chicken breast, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • ¼ cup peanut sauce
  • 4 large lettuce leaves
  • 2 tablespoon chopped cilantro
  • 1 lime, cut into wedges

Instructions 

  1. Heat olive oil in a skillet over medium heat.
  2. Add chicken and cook until no longer pink, about 5-7 minutes.
  3. Add red bell pepper and carrot, cook for another 2-3 minutes.
  4. Stir in peanut sauce and cook for another minute.
  5. Place a large lettuce leaf on a plate and spoon chicken mixture onto the leaf.
  6. Top with chopped cilantro and a squeeze of lime.
  7. Roll up the lettuce leaf and serve immediately.
